Easy Vegan, Gluten-Free Banana Bread


Meet your new favorite easy, vegan, gluten-free banana bread recipe. Make this moist, healthy, delicious loaf quickly in a single bowl. I'll spare you my life story and ever-long scrolling and get right into the banana-y goodness!

Dietary Notes

  • Gluten-free

  • Plant-based (vegan)

  • Vegetarian

Ingredients

  • 4 medium ripe bananas (3 bananas yield ~1 1/2 cups or 337 g)

  • 1/2 tsp pure vanilla extract

  • 1 cup chopped walnuts (omit if allergic!)

  • flax egg ( I tbsp flaxseed meal + 2.5 tbsp water)

  • 3 Tbsp avocado or coconut oil, melted

  • 1/3 cup packed organic brown sugar

  • 2-3 Tbsp maple syrup (depending on ripeness of bananas // or sub honey)

  • 3 1/2 tsp baking powder

  • 3/4 tsp sea salt

  • 1/3 tsp ground cinnamon

  • 3/4 cup unsweetened almond milk (or other dairy-free milk)

  • 1 1/4 cup almond meal

  • 1 1/4 cup gluten-free flour blend

  • 1 1/4 cup gluten-free oats

For Serving

  • Honey (Try local honey!)

Instructions

  1. Preheat oven to 350 degrees F. Line a ~9×5-inch loaf pan with parchment paper or spead coconut/avocado oil along all sides.

  2. Mash 3 banana in a large bowl (you can leave some lumps :). **Save one banana for a decorative topping.

  3. Add all ingredients and whisk to combine. Last ingredients to add: almond meal, gluten-free flour, and oats and combine.

  4. Bake for 50 mins.

  5. Remove and add long-way sliced banana to top of bread (press it down firmly).

  6. Bake for 10-15 more mins. When done, it should feel firm and be golden on top.

  7. Let cool completely before cutting! (Patience here :)

  8. Drizzle with honey (HIGHLY recommended!) and enjoy!
